Ingredients

  • 6 large green peppers
  • 1 lb. lean ground beef
  • 1 Tbsp. cooking oil
  • 1 c. finely chopped onion
  • 1 c. grated sharp Cheddar cheese
  • 1 c. cooked rice
  • 1/2 c. wheat germ
  • 1 (8 oz.) can tomato sauce
  • 1/4 c. ketchup
  • 1/4 tsp. black pepper
  • 1 tsp. chili powder

Instructions

  1. Prepare the green peppers by cutting off tops about 1/2-inch below the stem and removing seeds.
  2. Blanch peppers in boiling water for 1 to 2 minutes, then drain.
  3. Brown the lean ground beef slightly in cooking oil over medium heat.
  4. Add finely chopped onion and cook until vegetables are soft.
  5. Remove from heat and stir in 2/3 cup of grated sharp Cheddar cheese, cooked rice, wheat germ, tomato sauce, ketchup, black pepper, and chili powder.
  6. Spoon the mixture into the prepared peppers.
  7. Sprinkle the tops with the remaining cheese.
  8. Bake at 350°F for 30 to 35 minutes until cheese is melted and peppers are tender.
