Rice'S Stuffed Green Peppers

- Prepare the green peppers by cutting off tops about 1/2-inch below the stem and removing seeds.
- Blanch peppers in boiling water for 1 to 2 minutes, then drain.
- Brown the lean ground beef slightly in cooking oil over medium heat.
- Add finely chopped onion and cook until vegetables are soft.
- Remove from heat and stir in 2/3 cup of grated sharp Cheddar cheese, cooked rice, wheat germ, tomato sauce, ketchup, black pepper, and chili powder.
- Spoon the mixture into the prepared peppers.
- Sprinkle the tops with the remaining cheese.
- Bake at 350°F for 30 to 35 minutes until cheese is melted and peppers are tender.
