Ingredients

  • 1 lb butter
  • 1 lb sugar
  • 1 lb citron
  • 2 lb seedless raisins
  • 2 lb currants
  • 1 lb pecans, shelled
  • 1 lb conserved pineapple
  • 1 glass grape juice
  • 4 Tbsp melted chocolate
  • 12 eggs
  • 1 lb sifted flour
  • 1 large glass grape jelly
  • 1 lb walnuts, shelled
  • 1 lb conserved cherries
  • 1 Tbsp nutmeg
  • 1 tsp cloves
  • 1/2 tsp allspice

Instructions

  1. Soak the citron, raisins, currants, pineapple, and cherries in grape juice overnight.
  2. Cream the butter and gradually add sugar, then incorporate the egg yolks, sifted flour, spices, grape jelly, and melted chocolate.
  3. Add the soaked fruits and shelled nuts to the mixture.
  4. Fold in stiffly beaten egg whites until well combined.
  5. Pour the batter into greased and brown paper-lined tube pans.
  6. Bake in a slow oven at 225°F (107°C) for 1 1/2 to 2 hours until a toothpick inserted in the center comes out clean.
  7. Allow to cool before removing from pans.
