Richard's Caso is a creamy, spicy cheese dip with a smoky tomato and chili flavor, perfect for parties, served warm or cold with tortilla chips or vegetables.

Ingredients

  • 2 cans Ro-Tel tomatoes
  • 2 cans chilies
  • 4 fresh jalapenos
  • 2 large onions
  • 5 cloves garlic
  • 1/4 cup oil
  • 1 stick margarine
  • 2 lb Velveeta cheese

Instructions

  1. Place the canned Ro-Tel tomatoes, chilies, and fresh jalapenos in a blender or food processor and blend well.
  2. Chop the onions and garlic.
  3. Saute the chopped onions and garlic in hot oil or margarine until translucent.
  4. Add the blended tomato and chili mixture to the sautéed onions and garlic, and simmer for about 15 minutes to reduce the liquid.
  5. Gradually add the Velveeta cheese, stirring until fully melted and smooth.
  6. Serve the dip warm or cold with tortilla chips or raw vegetables.
