Ingredients

  • 1 tsp. melted butter
  • 1 c. confectioners sugar
  • 3 drops lemon extract
  • 3 Tbsp. milk
  • 4 large eggs
  • 1 c. granulated sugar
  • 3/4 c. light vegetable or canola oil
  • 1/2 tsp. almond extract
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 4 c. all-purpose flour
  • 2/3 c. toasted slivered almonds
  • 1 c. coarsely chopped cranberries

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a wooden spoon, cream eggs and sugar together.
  3. Stir in melted butter, oil, lemon extract, and almond extract.
  4. In a separate bowl, mix dry ingredients: flour, salt, and baking powder.
  5. Gradually add dry ingredients to the creamed mixture, mixing well.
  6. Stir in toasted slivered almonds and chopped cranberries.
