Creamy risotto infused with saffron and Marsala wine, topped with cheese and optional mushrooms, perfect for a comforting yet elegant meal.

Ingredients

  • 1 stick butter
  • 1 medium onion, chopped
  • 1/2 lb. Arborio rice
  • 3 small cans chicken broth
  • 1/2 c. Marsala wine
  • 1 small packet saffron
  • 1/2 c. hot water
  • 1/2 c. grated cheese
  • 1/2 lb. sliced mushrooms

Instructions

  1. Into a saucepan, sauté onion in butter until lightly browned.
  2. Slowly pour in rice, stirring often.
  3. Cook on very low heat.
  4. Stir in chicken broth and Marsala wine.
  5. Put saffron in hot water and add to rice.
  6. Cover with lid and allow to sit about 15 to 20 minutes until rice gets soft and absorbs liquid.
  7. After 20 minutes, strain grated cheese and stir into the risotto.
  8. If using mushrooms, sauté sliced mushrooms when doing onions.
