Ingredients

  • 3 1/2 to 4 cups chicken broth
  • 7 tablespoons butter
  • 1 large onion, chopped
  • 1 1/2 cups uncooked rice
  • 1/2 cup dry white wine
  • 1/2 teaspoon salt
  • pinch pepper
  • 1/4 teaspoon saffron threads
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat broth in a small saucepan over medium heat until simmering; keep hot over low heat.
  2. Heat 6 tablespoons of butter in a heavy 10-inch skillet or 2 1/2-quart saucepan over medium heat.
  3. When foam subsides, add chopped onion; sauté until onion is soft, about 5 minutes.
  4. Stir in rice; cook and stir for 2 minutes.
  5. Stir in white wine, salt, and pepper.
  6. Cook uncovered over medium-high heat, stirring occasionally, until wine is evaporated, about 3 to 5 minutes.
