Ingredients

  • 1 large roasting chicken
  • 1 cup brown rice
  • 3 tablespoons soy sauce
  • 1/2 cup mandarin juice
  • 1/4 teaspoon mandarin peel, chopped
  • 1 can water chestnuts, drained and sliced
  • 4 teaspoons cornstarch
  • chicken broth
  • 1/4 cup chopped onion
  • 5 tablespoons butter
  • 1/2 cup celery, thinly sliced

Instructions

  1. Cook brown rice in chicken broth instead of water.
  2. Saute chopped onion lightly in 4 teaspoons of butter.
  3. Add cooked rice, sliced celery, drained water chestnuts, 1/2 cup mandarin juice, chopped mandarin peel, and 2 tablespoons soy sauce; mix lightly.
  4. Stuff the rice mixture into the roasting chicken and skewer the openings.
  5. Melt remaining 2 tablespoons of butter and brush it over the skin of the chicken.
  6. Place the chicken in a roasting pan, cover loosely with foil, and bake for 1 hour at 350°F.
