Instructions
- Cook brown rice in chicken broth instead of water.
- Saute chopped onion lightly in 4 teaspoons of butter.
- Add cooked rice, sliced celery, drained water chestnuts, 1/2 cup mandarin juice, chopped mandarin peel, and 2 tablespoons soy sauce; mix lightly.
- Stuff the rice mixture into the roasting chicken and skewer the openings.
- Melt remaining 2 tablespoons of butter and brush it over the skin of the chicken.
- Place the chicken in a roasting pan, cover loosely with foil, and bake for 1 hour at 350°F.
