Ingredients

  • 2 red peppers
  • 1 eggplant
  • flour
  • 1/4 cup extra virgin olive oil
  • 1 clove garlic
  • salt
  • pepper
  • 1/2 bunch Italian flat leaf parsley
  • 1 bunch basil
  • 1 log Coach Farm Chevre

Instructions

  1. Roast the red peppers, then remove the skin and seeds.
  2. Peel and slice the eggplant into 1/4-inch thick slices.
  3. Dredge the eggplant slices in flour.
  4. Brown the floured eggplant slices in 1/4 cup of extra virgin olive oil, then towel dry to remove excess oil.
  5. Oil a 6 x 4-inch terrine mold and rub garlic around its interior.
  6. Season the inside of the mold with salt and pepper.
  7. Layer the eggplant slices in the mold, covering the bottom.
  8. Add a layer of roasted red pepper slices on top of the eggplant.
  9. Sprinkle with chopped parsley and basil leaves.
  10. Add a layer of sliced goat cheese (Chevre).
  11. Repeat the layering process until the terrine is completely filled.
  12. Press the terrine and refrigerate for 4 hours.
  13. Remove from the mold and slice.
  14. Serve at room temperature.
