Ingredients

  • 3 large onions
  • 1 whole garlic
  • 2 Tbsp. olive oil
  • 1/2 lb. carrots
  • 1/2 head celery
  • 1 small butternut squash
  • 1 small acorn squash
  • 1 sweet potato
  • 2 white turnips
  • 1 tsp. ground turmeric
  • 2 tsp. ground coriander
  • 2 tsp. ground cumin
  • 1 dried chili pepper
  • 3 c. vegetable or chicken broth
  • 6 plum tomatoes
  • 2 zucchini
  • 1 (19 oz.) can chick peas

Instructions

  1. In a pressure cooker, over moderate heat, cook the onions and garlic in oil until tender.
  2. Add the carrots, celery, butternut squash, acorn squash, potato, and turnips.
  3. Cook for a few minutes until just beginning to soften.
  4. Toss in the turmeric, coriander, cumin, and chili pepper.
  5. Add the broth, tomatoes, and zucchini. Seal the pressure cooker and cook over high heat until steam flows steadily.
  6. Turn heat down so that steam keeps a constant stream. Cook for 4 minutes.
  7. Cool the pressure cooker under running cold water and release the steam.
  8. Open the cooker, return to stove, add chickpeas, and heat through.
  9. Serve over rice, if desired.
