- In a large bowl, beat eggs, sugar, buttermilk, mayonnaise, and vanilla until smooth.
- In another bowl, mix flour, salt, baking powder, baking soda, and cinnamon.
- Add the dry ingredients to the egg mixture and stir just until combined.
- Core the apples and chop them.
- Add the chopped apples, raisins, and chopped walnuts to the batter; stir just to mix.
- Divide the batter evenly between two greased and floured 5 x 9-inch loaf pans.
- Bake at 375°F (190°C) for about 1 hour and 10 minutes.
- Test with a toothpick for doneness.
- Turn the loaves onto a rack to cool.
