Ingredients

  • 4 large eggs
  • 2 cups sugar
  • 1/2 cup buttermilk
  • 1/2 cup mayonnaise
  • 1 teaspoon vanilla
  • 3 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 medium tart green apples
  • 1 cup raisins
  • 1 cup chopped walnuts

Instructions

  1. In a large bowl, beat eggs, sugar, buttermilk, mayonnaise, and vanilla until smooth.
  2. In another bowl, mix flour, salt, baking powder, baking soda, and cinnamon.
  3. Add the dry ingredients to the egg mixture and stir just until combined.
  4. Core the apples and chop them.
  5. Add the chopped apples, raisins, and chopped walnuts to the batter; stir just to mix.
  6. Divide the batter evenly between two greased and floured 5 x 9-inch loaf pans.
  7. Bake at 375°F (190°C) for about 1 hour and 10 minutes.
  8. Test with a toothpick for doneness.
  9. Turn the loaves onto a rack to cool.
