Ingredients

  • 1 1/3 cups boiling water
  • 1 cup oats
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1/2 cup coconut
  • 2 eggs
  • 1 1/3 cups flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Cook oats in boiling water until soft.
  2. Add butter to the cooked oats and let cool.
  3. In a mixing bowl, add brown sugar, granulated sugar, coconut, and eggs to the cooled oats mixture and combine well.
  4. In a separate bowl, whisk together flour, soda, salt, and cinnamon.
  5. Gradually mix the dry ingredients into the wet mixture until fully combined.
  6. Pour the batter into a greased 9 x 13-inch baking pan.
  7. Bake in a preheated oven at 350°F (175°C) for 35 to 45 minutes, until light brown and a toothpick inserted in the center comes out clean.
