Ingredients

  • 1 round steak (10 or 12 inches long, 6 or 7 inches wide, 1/2 to 3/4 inch thick)
  • 1 teaspoon salt
  • 1 tablespoon pepper
  • 3 large cloves garlic
  • 1 can olives (ripe or green), sliced
  • 1 tablespoon oregano
  • 1 tablespoon thyme
  • 1 tablespoon marjoram
  • 2 cans beer (room temperature)

Instructions

  1. Lay the round steak flat on a clean surface.
  2. Sprinkle salt and pepper evenly over the steak.
  3. Chop the garlic cloves and spread over the meat.
  4. Sprinkle oregano, thyme, and marjoram onto the steak.
  5. Spread sliced olives over the seasoned meat.
  6. Roll the steak tightly into a jelly roll shape and secure if necessary.
  7. Place the rolled steak in a 3 to 4-quart Dutch oven.
  8. Pour two cans of room temperature beer over the meat.
  9. Use an empty Coke bottle to help position or stabilize if needed.
  10. Cover and simmer on low heat for about 2 hours until meat is tender.
