Ingredients

  • 6 to 8 sole fillets
  • 1 cup Monterey Jack cheese, shredded
  • 1/4 cup fresh parsley, chopped
  • 1 package fresh spinach, chopped
  • 3 to 4 green onions, chopped
  • 1/2 pound fresh mushrooms, chopped
  • milk

Instructions

  1. Dip sole fillets in milk, then in bread crumbs.
  2. Mix shredded Monterey Jack cheese, chopped parsley, chopped spinach, chopped green onions, and chopped mushrooms.
  3. Place 1 to 2 heaping spoonfuls of the mixture in the center of each fillet.
  4. Roll up the fillets and place seam side down in a baking dish.
  5. Bake at 350°F for 20 to 30 minutes.
