  • chopped parsley

Instructions

  2. Melt 2 ounces of butter in a frying pan over medium heat.
  3. Saute the grated vegetables in the butter, ensuring they do not brown.
  4. Add the chicken broth, salt, and pepper to taste to the pot with the vegetables.
  5. Add the sugar, then simmer the mixture in the pot for about 1 hour and 15 minutes until it cooks down.
  6. Puree the cooked vegetables and broth using a food processor or food mill until smooth.
  7. Continue to simmer the pureed mixture until it becomes thick enough to cover a spoon.
  8. During the last 5 minutes of cooking, add 1 stick of butter and a handful of chopped parsley.
  9. Hollow out a hard roll to serve the soup in, saving the bread for dipping.
  10. Place a tray of bread pieces on the table for dipping and eating with fingers.
  11. Eat the soup with pieces of bread dipped into it; the roll can also be eaten fully.
