Ingredients

  • 6 (1/2-inch thick) loin pork chops
  • 1 tsp. oil
  • fresh ground pepper
  • 2 shallots
  • 1/2 cup dry vermouth

Instructions

  1. Trim fat from the pork chops.
  2. Add oil to a skillet and heat over medium-high heat.
  3. Add the pork chops and brown well on both sides.
  4. Sprinkle the chops with ground pepper.
  5. Add sliced shallots, dry vermouth, and rosemary to the skillet.
  6. Bring to a boil over high heat.
  7. Reduce the heat to low, cover, and simmer for 10 to 15 minutes.
  8. Serve with brown rice and carrots.
