Ingredients

  • 1 salted herring (about 1 lb.)
  • 1 Tbsp. pickled beet juice
  • 1 tsp. vinegar
  • 2 c. cold, cooked carrots

  • 2 hard-cooked eggs
  • parsley sprigs
  • 1/2 c. whipped cream
  • 1/2 tsp. sugar
  • 2 c. cold, cooked potatoes
  • 1 (1 lb.) can beets
  • 1 large pickle

Instructions

  1. Soak the salted herring in cold water for 24 hours, then skin and fillet.
  2. Combine the whipped cream, pickled beet juice, sugar, and vinegar. Chill.
  3. Cut the herring into cubes.
  4. Combine the herring with the cooked carrots, peeled and diced apples, chopped eggs, diced potatoes, drained and diced beets, and diced pickle.
  5. Mix the ingredients well.
  6. Fold in the chilled whipped cream dressing.
  7. Chill the salad.
  8. Garnish with parsley sprigs and serve.
