Ingredients

  • 1 medium onion, chopped
  • 1/2 medium bell pepper, chopped
  • 1/2 celery rib, chopped
  • 1 tsp minced garlic
  • 1 stick margarine
  • 1 can diced Ro-Tel
  • 2 cans whole kernel corn, drained
  • 1 can creamed corn
  • 1 lb crawfish
  • 2 Tbsp cornstarch
  • 1/2 cup water
  • 1/2 lb shredded Cheddar cheese

Instructions

  1. Saute chopped onion, chopped bell pepper, chopped celery rib, and minced garlic in margarine.
  2. Add the can of diced Ro-Tel and cook for 30 minutes.
  3. Add drained whole kernel corn and cook for another 30 minutes.
  4. Add crawfish, salt, and pepper; cook for 15 minutes.
  5. Thicken the mixture with a mixture of cornstarch and water; cook for 5 minutes.
  6. Pour the mixture into a casserole dish.
  7. Top with shredded Cheddar cheese.
  8. Bake in a 350°F oven for 15 minutes until cheese is melted and bubbly.
