Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. onion, chopped
  • 3 Tbsp. green pepper, chopped
  • 2 c. tomatoes, chopped
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3 c. cooked, shredded cabbage
  • 1/2 c. buttered whole wheat bread crumbs
  • 1/2 c. grated Cheddar cheese

Instructions

  1. Sauté onion and green pepper in butter until slightly brown.
  2. Add chopped tomatoes, salt, and pepper to the sautéed vegetables.
  3. Put half of the cooked, shredded cabbage in a greased casserole dish.
  4. Spread half of the tomato mixture over the cabbage.
  5. Repeat with the remaining cabbage and tomato mixture in layers.
  6. Sprinkle bread crumbs and grated Cheddar cheese on top.
  7. Bake at 350°F for 20 minutes until golden and bubbly.
