Ingredients

  • 1 large white onion, chopped
  • 1 green onion, chopped
  • 2 bell peppers, chopped
  • 1/2 cup celery, chopped
  • 6 tablespoons butter, divided
  • 1 (16 oz.) can tomatoes
  • 1/2 tablespoon chili powder
  • salt and pepper to taste
  • 2 tablespoons flour
  • 1 cup milk
  • 12 hard-cooked eggs
  • 1/2 cup buttered bread crumbs
  • 1/4 cup Parmesan cheese

Instructions

  1. Saute chopped white onion, green onion, bell peppers, and celery in 4 tablespoons of melted butter until vegetables are tender.
  2. Add canned tomatoes, chili powder, salt, and pepper to the vegetable mixture.
  3. Cook until the mixture thickens.
  4. In a separate pan, melt 2 tablespoons of butter.
  5. Add flour and blend thoroughly to make a roux.
  6. Gradually add milk and stir until the white sauce thickens.
  7. Slice the hard-cooked eggs into round slices.
  8. In a buttered 9 x 13-inch glass baking dish, layer the white sauce and tomato mixture, then a layer of sliced eggs, repeating until all ingredients are used, ending with the sauce layer.
  9. Top with buttered bread crumbs and Parmesan cheese if desired.
  10. Bake at 350°F (175°C) for 30 minutes.
