Creole Eggs
Creole Eggs is a hearty baked dish featuring layered eggs, savory tomato and vegetable sauce, topped with bread crumbs and cheese, perfect for brunch or family dinners.
Ingredients
- 1 large white onion, chopped ⓘ
- 1 green onion, chopped
- 2 bell peppers, chopped ⓘ
- 1/2 cup celery, chopped ⓘ
- 6 tablespoons butter, divided ⓘ
- 1 (16 oz.) can tomatoes ⓘ
- 1/2 tablespoon chili powder ⓘ
- salt and pepper to taste ⓘ
- 2 tablespoons flour ⓘ
- 1 cup milk ⓘ
- 12 hard-cooked eggs
- 1/2 cup buttered bread crumbs ⓘ
- 1/4 cup Parmesan cheese ⓘ
Instructions
- Saute chopped white onion, green onion, bell peppers, and celery in 4 tablespoons of melted butter until vegetables are tender.
- Add canned tomatoes, chili powder, salt, and pepper to the vegetable mixture.
- Cook until the mixture thickens.
- In a separate pan, melt 2 tablespoons of butter.
- Add flour and blend thoroughly to make a roux.
- Gradually add milk and stir until the white sauce thickens.
- Slice the hard-cooked eggs into round slices.
- In a buttered 9 x 13-inch glass baking dish, layer the white sauce and tomato mixture, then a layer of sliced eggs, repeating until all ingredients are used, ending with the sauce layer.
- Top with buttered bread crumbs and Parmesan cheese if desired.
- Bake at 350°F (175°C) for 30 minutes.
