Ingredients

  • 9 lasagna noodles
  • 1 cup shredded carrots
  • 16 oz tomato sauce
  • 16 oz ricotta cheese
  • 1 cup mozzarella cheese
  • 1 clove garlic
  • 1 teaspoon oregano
  • 1 package chopped broccoli
  • 1/4 cup shredded Parmesan cheese

Instructions

  1. Cook the lasagna noodles according to package instructions.
  2. Preheat oven to 350°F (175°C).
  3. Grease a 13 x 9-inch baking dish.
  4. Mix tomato sauce, minced garlic, and oregano in a small bowl.
  5. In a medium bowl, combine ricotta cheese, shredded carrots, chopped broccoli, and Parmesan cheese.
  6. Spread 1/2 cup of the tomato sauce mixture on the bottom of the dish.
  7. Place 3 cooked noodles on top of the sauce.
  8. Spread 1/2 cup of the vegetable mixture over the noodles.
  9. Repeat layering with remaining ingredients: sauce, noodles, vegetables, ending with noodles on top.
  10. Sprinkle mozzarella cheese evenly over the top.
  11. Bake for 45 minutes until bubbly and golden.
  12. Let cool for 20 minutes before cutting into squares.
