Ingredients

  • 1 cup sugar
  • 1/2 cup shortening
  • 1/8 teaspoon ground saffron
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 teaspoons grated lemon rind
  • 2 teaspoons lemon juice

Instructions

  1. Combine sugar, shortening, and ground saffron; beat well.
  2. Add eggs one at a time, beating after each addition.
  3. In a separate bowl, mix flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the creamed mixture alternately with milk, mixing well.
  5. Stir in lemon juice and grated lemon rind.
  6. Pour batter into a greased 9 x 5 x 3-inch loaf pan.
  7. Bake at 350°F (175°C) for 55 to 60 minutes until a toothpick inserted into the center comes out clean.
