Ingredients

  • 2 cups cooked rice
  • 1/2 package fresh spinach, chopped
  • 3 celery stalks, diced
  • 1/3 cup yellow raisins
  • 1 green pepper, diced
  • 3 tablespoons parsley
  • 3 scallions
  • 1 1/2 cups cashews
  • 1 1/2 cups sliced mushrooms
  • 1/2 package chow mein noodles

Instructions

  1. Pat dry all vegetables and ingredients with paper towel, except chow mein noodles.
  2. Prepare the sauce according to your preferred recipe (not provided).
  3. In a large bowl, combine cooked rice, chopped spinach, diced celery, yellow raisins, diced green pepper, chopped parsley, sliced scallions, cashews, and sliced mushrooms.
  4. Add the chow mein noodles to the mixture and toss gently to combine.
  5. Pour the sauce over the salad and mix thoroughly.
  6. Serve immediately or refrigerate for later serving.
