Ingredients

  • 12 large cucumbers
  • 12 medium onions
  • 1 small jar pimentos or 1 sweet red pepper
  • 3 c. sugar
  • 1 Tbsp. turmeric
  • 1 Tbsp. celery seed
  • 1/2 tsp. cayenne pepper
  • 1/2 c. flour
  • 1 qt. vinegar
  • 1/2 c. salt
  • 3 qt. cold water

Instructions

  1. Peel and slice or chunk cucumbers and onions.
  2. Let stand overnight in a brine of salt and water.
  3. Pour off the brine in the morning.
  4. Make a sauce with sugar, turmeric, celery seed, cayenne pepper, flour, vinegar, and pimentos or red pepper.
  5. Add the cucumbers and onions to the sauce.
  6. Cook the mixture for 10 to 15 minutes after it comes to a boil.
  7. Pack the hot mixture into jars and seal.
