Salad Maison
A fresh and flavorful salad featuring crisp lettuce, a tangy raspberry and lemon vinaigrette, topped with a creamy egg and fragrant herbs, perfect for light lunches or side dishes.
Ingredients
- 1 large head lettuce (romaine or butter variety), broken into pieces, washed and chilled
- 1 hard-boiled egg, quartered
- 1 small clove garlic ⓘ
- 2 sprigs parsley ⓘ
- 1 teaspoon tarragon mustard ⓘ
- 1/4 teaspoon dried chervil ⓘ
- 1 tablespoon raspberry vinegar ⓘ
- 1 tablespoon lemon juice ⓘ
- 6 tablespoons olive oil ⓘ
- 1/4 teaspoon salt
- pepper to taste ⓘ
Instructions
- In a food processor, process the hard-boiled egg and set aside.
- With the machine running, drop the garlic and process until minced.
- Add parsley and process until chopped.
- Add tarragon mustard, dried chervil, raspberry vinegar, lemon juice, olive oil, salt, and pepper.
- Process until well blended.
- Toss the dressing with the lettuce.
- Sprinkle the processed egg on top before serving.
