Ingredients

  • 1 large head lettuce (romaine or butter variety), broken into pieces, washed and chilled
  • 1 hard-boiled egg, quartered
  • 1 small clove garlic
  • 2 sprigs parsley
  • 1 teaspoon tarragon mustard
  • 1/4 teaspoon dried chervil
  • 1 tablespoon raspberry vinegar
  • 1 tablespoon lemon juice
  • 6 tablespoons olive oil
  • 1/4 teaspoon salt
  • pepper to taste

Instructions

  1. In a food processor, process the hard-boiled egg and set aside.
  2. With the machine running, drop the garlic and process until minced.
  3. Add parsley and process until chopped.
  4. Add tarragon mustard, dried chervil, raspberry vinegar, lemon juice, olive oil, salt, and pepper.
  5. Process until well blended.
  6. Toss the dressing with the lettuce.
  7. Sprinkle the processed egg on top before serving.
