Ingredients

  • 17 1/2 oz. frozen puffed pastry
  • 3 c. torn mixed greens
  • 6 cherry tomatoes, quartered
  • 1/2 c. sliced pitted ripe olives
  • thin slices green and red peppers
  • sliced scallions
  • 4 oz. semi-soft cheese with garlic and herbs
  • 2 tsp. Dijon mustard
  • 1 or 2 Tbsp. milk

Instructions

  1. Thaw the pastry according to package directions.
  2. On a lightly floured surface, roll the pastry into a 12-inch circle.
  3. Place the rolled pastry on a large baking sheet.
  4. Prick the bottom of the pastry with a fork to prevent bubbling.
  5. Bake in a preheated oven at 375°F for 15 to 18 minutes until golden brown.
  6. Allow the pastry to cool slightly before adding toppings.
  7. Spread the cheese evenly over the cooled pastry.
  8. In a small bowl, mix Dijon mustard with 1 or 2 tablespoons of milk to thin if desired.
  9. Arrange torn mixed greens, cherry tomatoes, olives, sliced peppers, and scallions over the cheese.
  10. Drizzle with the mustard-milk mixture if desired and serve.
