Ingredients

  • 2 Egg Beaters
  • 16 oz. can salmon, drained
  • 3.5 cups soft bread crumbs (from 5 slices)
  • 1/3 cup chopped green onions
  • 2/3 cup chopped celery
  • 3 Tbsp. salad oil
  • 2 (1 1/8 or 1 1/4 oz.) Hollandaise sauce mix
  • 3 English muffins, split and toasted

Instructions

  1. About 45 minutes before serving, in a bowl, mix Egg Beaters, drained salmon, bread crumbs, chopped green onions, and chopped celery; mix well.
  2. Shape the mixture firmly into 6 patties.
  3. In a 12-inch skillet over medium heat, heat the salad oil, then fry the patties 5 minutes on each side or until lightly browned.
  4. Meanwhile, prepare Hollandaise sauce mix as per the package instructions.
  5. Split and toast the English muffins.
  6. Top each muffin half with a salmon patty, spoon on Hollandaise sauce, and serve.
