Ingredients

  • 1 bunch green onions, chopped
  • 1 stick butter
  • 1/2 cup celery, diced
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup parsley
  • 1 quart oysters
  • 1 1/2 quarts milk
  • 1/2 teaspoon thyme

Instructions

  1. Melt butter in a large pot and add chopped green onions, diced celery, and minced garlic.
  2. Cook until the vegetables are clear.
  3. Add oysters and cook until their ends curl, about 10 minutes.
  4. Add bay leaves, thyme, and parsley and stir.
  5. Pour in milk, add cayenne pepper, and salt if needed, then bring to a slow boil.
  6. Turn off immediately after boiling.
