Ingredients

  • 1 1/2 cups cooked salmon or canned, flaked
  • 2 boiled potatoes, diced
  • 2 tablespoons green, yellow and/or red sweet peppers, chopped
  • 1/4 cup onion, chopped
  • pinch of cayenne pepper
  • salt to taste
  • pepper to taste
  • 2 tablespoons parsley, minced
  • 3 tablespoons olive oil

Instructions

  1. In a bowl, combine cooked salmon, diced boiled potatoes, chopped sweet peppers, chopped onion, cayenne pepper, salt, pepper, and minced parsley.
  2. In a skillet, heat olive oil over medium heat.
  3. Add the salmon mixture to the skillet and flatten with the back of a spatula.
  4. Cook until the bottom develops a crust, then flip the mixture over with a spatula.
  5. Add heavy cream, increase heat to thicken the sauce, and quickly brown the other side.
  6. Garnish with avocado slices and add salsa to taste before serving.
