Ingredients

  • 1 (7 3/4 oz.) can red salmon
  • milk
  • 2 tsp. white sugar
  • 1/4 cup salad oil or melted shortening
  • 2 cups all-purpose flour, sifted
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 egg, beaten

Instructions

  1. Drain and flake the salmon, reserving the liquid.
  2. Add milk to the reserved liquid to measure 1 cup.
  3. Mix and sift the flour, baking powder, salt, and sugar into a mixing bowl.
  4. Make a hole in the center of the dry ingredients.
  5. Combine the oil, beaten egg, and milk mixture.
  6. Add the wet mixture to the dry ingredients.
  7. Stir just until moistened to make a lumpy batter, do not overmix.
  8. Fold in the flaked salmon.
  9. Spoon the batter into a greased muffin tin, filling 2/3 full.
  10. Bake at 425°F for 15 to 20 minutes.
  11. Makes 12 muffins.
  12. Serve with a salad for a complete meal.
