Cucumber Tuna Boat

Instructions
- Cut cucumbers in half lengthwise and scrape out the seeds.
- Cut a small slice from the bottom of each cucumber half so they will not rock.
- Salt the cucumber cavities and set aside.
- In a bowl, combine drained tuna, shredded cheese, chopped celery, chopped hard-cooked eggs, mayonnaise, sweet pickle relish, minced onion, and lemon juice.
- Mix until well combined.
- Spoon the tuna mixture into the cucumber cavities.
- Sprinkle with paprika before serving.
