Ingredients

  • 2 small cucumbers
  • 1 small can tuna, drained and flaked
  • 3/4 cup shredded American cheese
  • 1/2 cup chopped celery
  • 2 hard-cooked eggs, chopped
  • 1/3 cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon minced onion
  • 1 teaspoon lemon juice
  • paprika

Instructions

  1. Cut cucumbers in half lengthwise and scrape out the seeds.
  2. Cut a small slice from the bottom of each cucumber half so they will not rock.
  3. Salt the cucumber cavities and set aside.
  4. In a bowl, combine drained tuna, shredded cheese, chopped celery, chopped hard-cooked eggs, mayonnaise, sweet pickle relish, minced onion, and lemon juice.
  5. Mix until well combined.
  6. Spoon the tuna mixture into the cucumber cavities.
  7. Sprinkle with paprika before serving.
