Ingredients

  • 1 (15 1/2 oz.) can pink salmon
  • 1 1/2 cups soft bread crumbs
  • 2 beaten eggs
  • 1/2 cup celery, finely chopped
  • 2 tablespoons green pepper, finely chopped
  • 2 tablespoons onion, finely chopped
  • 1 tablespoon lemon juice
  • 1 (8 oz.) package crescent rolls
  • dairy sour cream and chives (for garnish)
  • tomato wedges (for garnish)

Instructions

  1. Generously grease a 5-cup ovenproof ring mold and set aside.
  2. Drain and flake the pink salmon into a mixing bowl.
  3. Add bread crumbs, beaten eggs, finely chopped celery, green pepper, onion, and lemon juice to the salmon.
  4. Separate the crescent rolls into triangles.
  5. Arrange the triangles in the ring mold, alternating points and wide ends so the dough drapes over the center and outer edges.
  6. Pat the dough lightly to line the mold.
  7. Pack the salmon mixture into the lined mold.
  8. Turn the ends of the dough over the salmon to cover it and press to seal.
