Ingredients

  • 4 lb. tomatoes
  • 4 cloves garlic, minced
  • 2 medium onions, chopped
  • 2 medium green peppers, chopped
  • 6 to 8 jalapeno peppers, sliced or chopped
  • 2/3 cup vinegar
  • 3 to 4 teaspoons oregano
  • pinch of cayenne pepper
  • 1 or 2 (6 oz.) cans tomato paste

Instructions

  1. Peel the tomatoes and cut them up.
  2. Add garlic, onions, green peppers, vinegar, cayenne pepper, and tomato paste to the tomatoes.
  3. Bring all of this to a boil and cook for about 15 minutes.
  4. Add jalapeno peppers and cook the mixture for an additional hour.
  5. Pack the salsa into jars and seal.
