Ingredients

  • 6 egg whites
  • 1/2 tsp cream of tartar
  • 1 tsp vanilla flavoring
  • 2 cups white sugar
  • 1 cup chopped pecans
  • 1 package saltines, crushed

Instructions

  1. Beat egg whites until fluffy.
  2. Add vanilla flavoring and cream of tartar.
  3. Continue to beat while adding sugar.
  4. Fold in crushed saltines and chopped pecans.
  5. Spread the mixture into an oblong 9x13-inch baking dish.
  6. Bake in a preheated oven at 350°F for thirty minutes.
  7. Allow the cake to cool until cold.
  8. Spread 12 ounces of Cool Whip on top of the cooled cake.
  9. Sprinkle with coconut to your liking.
  10. Keep refrigerated until ready to serve.
