Ingredients

  • 4 pork chops (1/2 to 3/4 inch thick, boneless)
  • 1 Tbsp. oil
  • 1 clove garlic, minced
  • 3 Tbsp. dry sherry or broth
  • 3 Tbsp. soy sauce
  • 1 1/2 Tbsp. brown sugar
  • 1/4 tsp. crushed red pepper
  • 1 1/2 tsp. cornstarch
  • 1 1/2 Tbsp. water

Instructions

  1. Trim the pork chops.
  2. In a microwave-safe dish, combine the oil and minced garlic.
  3. Spread the oil and garlic mixture evenly in the dish.
  4. Microwave at high power for 1 minute.
  5. In a bowl, combine the dry sherry or broth, soy sauce, brown sugar, and crushed red pepper.
  6. Add the pork chops to the dish, turning them to coat evenly with the mixture.
  7. Pour the sauce over the chops and cover the dish with wax paper.
  8. Microwave at high power for 4 minutes, turning the chops and dish once after 2 minutes.
  9. Keep covered and microwave at medium power for 12 to 15 minutes, until no pink remains.
  10. Remove the chops to a serving dish.
  11. Dissolve the cornstarch in water.
  12. Stir the cornstarch mixture into the pan juices.
  13. Microwave at high power for 1 to 2 minutes, until the sauce thickens.
  14. Pour the sauce over the chops and serve.
