Ingredients

  • 1/2 lb beef
  • 1/4 lb pork with bones
  • 1 1/2 liters water
  • 1 tbsp salt
  • 1 small onion
  • 1 small sweet aji without seeds
  • 1 tomato
  • 1 lb name
  • 3 green peppers
  • 1 fresh ear of corn
  • 1/4 lb white yautia
  • 1/4 lb yellow yautia
  • 1 green plantain
  • 1/4 lb potato
  • 1/4 cup tomato sauce

Instructions

  1. In a large pot, combine water, beef, pork with bones, and salt. Bring to a boil and skim off any foam.
  2. Add the small onion, sweet aji, tomato, green peppers, and corn. Reduce heat and simmer for about 1 hour until meats are tender.
  3. Add the white yautia, yellow yautia, green plantain, potato, and tomato sauce. Continue simmering until vegetables are cooked and flavors meld, about 30 minutes.
  4. Taste and adjust salt as needed. Serve hot with rice or plantains if desired.
