  • 3 Tbsp. flour
  • 2 qt. hot beef bouillon
  • 1 c. red or white wine
  • 1 bay leaf
  • 1/2 tsp. sage

Instructions

  1. Melt butter with oil in a 4-quart saucepan. Add sliced onions and stir.
  2. Cover and cook over medium-low heat for 15 to 20 minutes until onions are brown.
  3. Uncover.
  4. Raise heat to medium-high. Add salt and sugar.
  5. Cook for 30 minutes or until onions are deep brown. Turn to medium and stir in flour.
  6. Cook for about 2 minutes to brown the flour.
  7. Remove from heat.
  8. Put in a cup of hot beef bouillon the wine, bay leaf, and sage.
  9. Bring to a simmer and continue to simmer slowly for 30 to 40 minutes. Season to taste.
  10. Add croutons or rye bread to bowls.
