Sandwich Platter
Ingredients
- None None butter, for spreading ⓘ
- 8 slices white bread ⓘ
- 1 None can tuna in oil, drained, flaked ⓘ
- 2 tbsp cream cheese ⓘ
- 1/2 stalk celery, finely chopped ⓘ
- 2 None spring onions, finely sliced ⓘ
- 1/2 None small carrot, peeled and grated ⓘ
- 1/2 None small ripe avocado, peeled, pitted, roughly mashed ⓘ
- 1 (7 oz) can sweet corn ⓘ
- 2 tbsp cottage cheese ⓘ
Instructions
- Spread butter over bread. Combine tuna, cream cheese, celery and 1 spring onion. Season. Top 2 slices of bread with carrot, tuna mixture then 2 more slices of bread. Trim crusts then cut each into 3.
- Combine avocado, sweet corn, cottage cheese and remaining spring onion. Season. Top 2 slices bread with pastrami, avocado mixture and remaining bread. Cut into triangles.
