Ingredients

  • 1 gallon green tomatoes
  • 1 quart green peppers
  • 1 quart red peppers
  • 1 quart onions
  • 1 bunch celery
  • 5 tablespoons salt
  • 6 cups sugar
  • 1 quart white vinegar
  • 3 tablespoons flour
  • 1 quart prepared mayonnaise
  • 1 quart prepared mustard
  • 4 tablespoons turmeric

Instructions

  1. Grind the green tomatoes, green peppers, red peppers, onions, and celery to measure.
  2. Mix all vegetables together and add salt.
  3. Let the mixture stand for 30 minutes.
  4. Drain the vegetables well by squeezing them by hand, then transfer to another pan.
  5. Add sugar and vinegar to the drained vegetables and boil for 25 minutes.
  6. Mix flour with some water to create a thickening agent.
  7. Add the thickening mixture to the boiling vegetables during the last 5 minutes of cooking.
  8. Stir the mixture to thicken.
  9. Remove from heat and let cool at room temperature for 1 hour.
  10. Add prepared mayonnaise and prepared mustard to the cooled mixture.
  11. While still warm, transfer the relish into sterilized jars and seal with hot lids and rings.
