Ingredients

  • 1 lb. red candied cherries
  • 1 lb. candied pineapple
  • 1 lb. pecans
  • 1 lb. Brazil nuts
  • 1 1/2 c. plain flour
  • 1/2 c. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 4 eggs

Instructions

  1. Mix eggs in a bowl.
  2. Combine dry ingredients (flour, sugar, baking powder, salt, cinnamon, nutmeg) together.
  3. Add the dry mixture to the eggs and mix well.
  4. Fold in candied cherries, candied pineapple, pecans, and Brazil nuts.
  5. Pour the batter into a greased and waxed paper lined tube pan.
  6. Bake at 300°F (150°C) for 1 to 1 1/2 hours, until done.
