Sarma is a hearty Eastern European dish featuring seasoned meatballs wrapped in cabbage leaves, simmered in a savory tomato and sauerkraut sauce for a comforting flavor blend.

Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup chopped ham
  • 1/4 cup raw rice
  • 2 eggs
  • 2 onions
  • salt and pepper
  • little water

Instructions

  1. Mix ground beef, ground pork, chopped ham, raw rice, eggs, chopped onions, salt, and pepper well.
  2. Form the mixture into small meatballs.
  3. Wrap each meatball in cabbage leaves that have been in salted boiling water for 1 to 2 days.
  4. Brown flour in ham or bacon fat to make a roux.
  5. Mix in 1 can of tomato puree and cook briefly.
  6. Add one can of sauerkraut to the tomato mixture and simmer.
  7. Gently place the meatballs into the sauce.
  8. Add another can of sauerkraut and some water if needed.
  9. Cover and cook slowly for 3 to 3 1/2 hours until tender.
