Ingredients

  • turtle, squirrel or rabbit
  • 1 c. olive oil
  • 2 onions, chopped
  • 2 bell peppers, chopped
  • 4 cans tomato sauce
  • 3 cans Ro-Tel tomatoes
  • 2 cans cream of celery soup
  • 2 cans cream of mushroom soup
  • 6 bay leaves
  • 3 Tbsp. sweet relish
  • 1/2 c. chopped olives
  • 4 tsp. Kitchen Bouquet
  • 4 c. parsley or parsley flakes

Instructions

  1. Season the meat and brown it in olive oil.
  2. Add chopped onions and bell peppers to the meat.
  3. Simmer for 3 to 4 minutes.
  4. Add tomato sauce, cream of celery soup, cream of mushroom soup, sweet relish, chopped olives, Kitchen Bouquet, parsley, and water.
  5. Cook until the meat is tender.
  6. Add bay leaves.
  7. Cook for an additional 10 minutes and remove the bay leaves.
  8. Season to taste with red and black peppers, garlic powder, Season-All salt, lemon pepper, and Tony Chachere Creole seasoning.
