Ingredients

  • 1 lb. raisins
  • water to cover raisins
  • 1 lb. beef sausage
  • 2 tsp. cinnamon
  • 2 c. sugar
  • 1 tsp. baking soda
  • 3 c. flour

Instructions

  1. Cover raisins with water and boil for 20 minutes.
  2. While raisins are boiling, combine sausage, cinnamon, and sugar in a bowl.
  3. Using a slotted spoon, add the raisins to the sausage mixture, reserving the raisin water.
  4. Measure 1 cup of the raisin juice; if less, add water to reach one cup.
  5. Add baking soda to the juice, then pour the mixture into the sausage blend, watching for foaming.
  6. Stir in the flour until well combined.
  7. Grease and flour a tube pan, then pour the batter in.
  8. Bake at 400°F for 55 minutes or until a toothpick inserted comes out clean.
