Sausage Chestnut Stuffing

Ingredients

  • 3 tbsp butter
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 9 oz cooked chicken apple sausage, cubed
  • 1 clove garlic, minced
  • 2 tbsp chopped fresh parsley leaves
  • 1 tbsp poultry seasoning
  • 1 cup diced roasted chestnuts
  • 1 cup sweetened dried cranberries
  • 8 cups cubed whole grain cranberry raisin bread (about 1 lb)
  • 1 None egg
  • 2 cups chicken stock

Instructions

  1. Preheat oven to 400°F. Grease a 9x9 inch baking dish.
  2. Melt butter in a large frying pan over medium heat. Cook celery, onion and sausage for 6-8 mins, or until softened. Add garlic and cook for 30 seconds. Transfer to a bowl. Add parsley, seasoning mix, chestnuts, cranberries and bread. Whisk together egg and broth then pour over bread mixture and stir to combine. Season. Transfer to prepared pan, cover with foil and bake for 35 mins. Remove foil and bake for another 5 mins.
