Ingredients

  • 1 lb. sausage
  • 2 cups corn bread mix
  • 1 egg
  • 1 cup milk
  • 1/2 teaspoon sugar
  • 1/2 cup diced mango
  • pepper
  • 1/2 cup minced onion
  • 1 cup shredded cheese

Instructions

  1. Brown sausage in a medium skillet (cast iron); do not drain. Add diced mango and minced onion.
  2. Mix corn bread mix, egg, sugar, and milk until well blended.
  3. Pour the batter over the cooked sausage mixture in the skillet.
  4. Bake at 350°F until the top is golden brown.
  5. Invert the skillet onto a plate and top with shredded cheese before serving.
