Sausage Macaroni Bake

Ingredients

  • 1 Tbsp. oil
  • 1 garlic clove
  • 1 large onion
  • 3/4 lb. sweet Italian sausages
  • 3 c. uncooked macaroni
  • 1 (28 oz.) can whole tomatoes
  • 1 Tbsp. oregano
  • 3 c. Cheddar cheese cubes

Instructions

  1. In a large skillet, heat oil and sauté chopped garlic until fragrant. Remove and discard garlic.
  2. Add chopped onion to the skillet and sauté until translucent. Transfer sautéed onion to a large casserole dish.
  3. In the same skillet, sauté sausage pieces until browned. Remove and drain well.
  4. Cook macaroni in boiling water until al dente, then drain.
  5. Add cooked macaroni, whole tomatoes, oregano, and sausage to the casserole dish with the onions.
  6. Stir in Cheddar cheese cubes until melted and well combined.
  7. Bake in a preheated oven at 350°F (175°C) for 20-30 minutes until bubbly and golden on top.
