Ingredients

  • 2/3 cup dry whole wheat bread crumbs
  • 3 tablespoons grated Parmesan cheese
  • 1 pound turkey cutlets
  • 1/4 cup skim milk
  • 1 teaspoon oil
  • 8 ounces no-salt added tomato sauce
  • 2 teaspoons minced onion
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt

Instructions

  1. Combine bread crumbs and 3 tablespoons of grated Parmesan cheese.
  2. Dip turkey cutlets in skim milk, then dredge in the crumb mixture.
  3. Heat a nonstick skillet to medium-high heat.
  4. Add 1 teaspoon of oil and cook the cutlets about 3 minutes on each side, adding up to 1 more teaspoon of oil if necessary. Remove cutlets to a warm platter.
  5. Heat the tomato sauce with minced onion, oregano, and salt.
  6. Pour the heated sauce over the cooked cutlets.
  7. Sprinkle with the remaining 1 tablespoon of Parmesan cheese and serve on a bed of noodles.
