  2. Drain excess fat from the sausage.
  3. Chop mushrooms very fine; sauté in 1/4 cup butter until all liquid has evaporated.
  4. Add chopped shallots to the mushroom mixture and cook briefly.
  5. Prepare filo dough according to package directions.
  6. Use 2 sheets of filo dough, buttered between layers, and crumble bread over the sheets.
  7. Spread the cooked sausage, mushroom mixture, and pieces of cream cheese over 2/3 of the length of the dough.
  8. Roll up the dough with the filling, folding the empty dough end on top to seal.
  9. Brush the rolled dough with melted butter.
  10. Bake at 350°F (175°C) until lightly browned, about 35 minutes.
  11. Cut each roll into 8 pieces for appetizers or 4 for a main course.
