Ingredients

  • 2 lb. crabmeat (backfin)
  • 6 oz. butter
  • 1 clove garlic, minced
  • 1/4 cup green pepper, minced
  • 1/4 cup fresh parsley, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon Old Bay

Instructions

  1. Remove cartilage from crabmeat.
  2. Melt butter in a saucepan.
  3. Sauté garlic and green pepper until peppers are tender but not brown.
  4. Add parsley, salt, pepper, Old Bay, and brandy.
  5. Gently toss in crabmeat.
  6. Saute slowly until crabmeat is heated, about 5 to 8 minutes.
  7. Serve on a platter with parsley sprigs and lemon wedges, if desired.
