Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/8 teaspoon nutmeg
  • medium-sized green tomatoes
  • 3 tablespoons butter
  • toast rounds
  • 3/4 cup milk or cream
  • 1 teaspoon chopped fresh parsley

Instructions

  1. Combine the flour, salt, paprika, and nutmeg; mix well.
  2. Cut the green tomatoes into 1/2-inch slices.
  3. Dip the tomato slices into the flour mixture to coat.
  4. Saute the slices gently in melted butter until golden brown.
  5. Place the cooked tomato slices on toast rounds.
  6. In the skillet, blend the remaining butter and flour with the milk and chopped parsley to make a sauce.
  7. When the sauce is smooth and hot, pour it over the tomatoes and toast.
