Ingredients

  • 1/3 cup shredded Parmesan cheese
  • 3 tablespoons sliced green onion
  • 1/4 cup margarine or butter
  • 1/4 cup flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • dash of nutmeg
  • 4 eggs, separated
  • 1 (15 oz) can spinach, drained or 1 large bunch or bag fresh spinach

Instructions

  1. Grease a 1 1/2-quart souffle dish or casserole; coat with 2 tablespoons of shredded Parmesan cheese.
  2. In a saucepan, sauté sliced green onion in margarine or butter until tender.
  3. Blend in flour and cook, stirring constantly.
  4. Gradually add milk, salt, pepper, and a dash of nutmeg, stirring until thickened.
  5. Stir in remaining Parmesan cheese.
  6. Add egg yolks one at a time, beating after each addition.
  7. Blend in drained or cooked spinach.
  8. Cool the mixture slightly.
  9. Beat egg whites until stiff but not dry.
  10. Fold egg whites into the spinach mixture gently.
  11. Pour into the prepared dish.
  12. Bake in a 375°F oven for 35 minutes until puffed and golden.
  13. Serve immediately.
